Jens started the business after he noticed a gap for fish and seafood alternatives while eating out in Barcelona. He moved to London in 2011 to build the concept and officially opened the food bar in 2015. The team focus on sourcing their ingredients carefully and keeping the menu simple and honest.

Then about a year or so later opened the second one on Kaliste Saloom rd. Then a year later opened number 3 on Rue Louis XIV. After 22 years sold the property and semi retired. 5 and a half years later opened what is know Tim’s kitchen(Ruby’s 4) at 1000 Albertson pkwy in Broussard la. Creole Cajun soul food. Grand ma’s cooking
