Victor Jules Bergeron started Trader Vic’s in 1934. He built a pub called Hinky Dink’s, which became known for its strong cocktails and Polynesian food. Trader Vic’s grew to have 25 restaurants around the world, and this London spot keeps that tradition going. It opened in 1963.
