The Shan State is part of Myanmar (formerly Burma) and borders China, India and Thailand. As such, its cuisine is informed by its neighbours, resulting in a gloriously schizophrenic mish-mash of Asian flavours and ingredients. The restaurant, The Shan State is situated on Shaftesbury Avenue and showcases a greatest hits menu of traditional Burmese dishes like the iconic Laphet. Made from fermented tea leaves, it’s a salad like no other accompanied with peanuts, dried prawn, garlic and tomato.
